It takes more time and a little more planning, but It takes more time and a little more planning, but I truly believe sourdough bread is easier than yeast bread. This recipe has become a part of my weekly routine, so we never buy bread!

Ingredients–
•50g bubbly, 100% hydration sourdough starter
•300g warm filtered water
•20g honey
•45g melted coconut oil
•150g whole wheat flour
•350g bread flour
•1.5tsp fine sea salt

Instructions–
1. Mix starter w/ water, honey + oil in a large bowl. Add flours + salt.
2. Mix by hand to form a shaggy dough. This begins the bulk ferment. Allow to rise 6-12 hours depending on the heat of your kitchen and the activity of your starter. Eight hours is my sweet spot, so I often do this overnight.
4. Optional: Let rest for 30 minutes and then for the first couple hours of the bulk ferment, you can continue doing stretch and folds every 30 min.
5. Place the dough onto a surface lightly sprayed with water + press out to a rectangle. Roll into a log + place in an oiled 9x5 loaf pan, seam side down.
6. Cover loosely + let rest until the dough has crested one inch above the rim of the pan, 1 to 2 hours.
7. Preheat your oven to 450F for at least an hour before baking the bread.
8. Place the loaf on the center rack, bake for 5 minutes, then reduce the temp to 400F. Bake for 40-50 minutes longer, until it reaches an internal temperature of 190-195F. Cool in the pan for 10 min, then turn it onto a wire rack to cool completely.

Meet your new favorite holiday drink zhusher-upper Meet your new favorite holiday drink zhusher-upper: Salty Gingerbread Latte Syrup (for coffee, cocktails, and so much more!).

☕1/2 c water
☕1/4 c molasses 
☕1/4 c maple syrup
☕1 tsp ground ginger
☕1 tsp sea salt
☕1 tsp vanilla extract
☕1/2 tsp ground cinnamon
☕1/8 tsp ground nutmeg

Combine all ingredients in a small saucepan. Bring to a boil then gently simmer for 3-5 minutes until desired thickness is achieved (it will thicken a bit more as it cools). Be sure to keep an eye on it as syrup can easily boil over. Store in the fridge and add to whatever you please for some holiday cheer!

Note it’s not *super* sweet and the molasses and ginger is strong, so please doctor to your tastes/mellow it out if giving to kids!

I plan to try this in a wintery spiced old fashioned asap!
